My chocolate cocoa cola cake is my Hubby’s favourite dessert that I make. It’s rich, decadent and very bad for you – it’s also utterly delicious and you’re going to LOVE IT!
250g Self-Raising Flour
300g Caster Sugar
3 heaped tbsp Cocoa
Pinch Bicarbonate of Soda
250ml Diet Coke
1 tsp Vanilla Extract
100ml Diet Coke
2 tbsp Cocoa
250g Icing Sugar
Heat the oven to 180°C, then sift your flour, bi carb, sugar and cocoa into a bowl.
Melt the butter and diet coke slowly in a frying pan, once it looks like the above, add it to the dry ingredients with the vanilla, milk and eggs. Mix until combined, then add to a greased cake tin
Bake on the centre shelf of your oven for 60mins or until a skewer comes out clean (start checking from 45mins).
For the topping, melt the butter, cocoa and diet coke in a pan and once combined, pour over the icing sugar and beat until smooth.
Pour the topping over the cake whilst it’s still warm and I MEAN…omnomnomnomnom!!
Once cooled, release the ring and leave the cake on the tin’s base (too messy to move!)
This is a very rich cake, so serve thinly sliced, with lots of fruit for a light pairing
Top Tip: Why the diet coke I hear you ask? Does it add flavour? No, it doesn’t – but it is the key ingredient that makes this recipe the marvel that it is because [insert Science here 😉 ] it makes it THE most incredibly moist (sorry to those who hate the word) sponge cake you will ever have the pleasure of tasting – so don’t skimp and don’t use full fat Coca-Cola either – I’ve tried and tested both and Diet Coke is the clear winner!
