I’m so excited to share this recipe with you, I had a little idea the other week and totally on a whim (and sans recipe I might add!) came up with these utter noms!
INGREDIENTS
For The Filling
250g Desiccated Coconut
70g Coconut Oil
60g Flour
80ml Maple Syrup love this one
200ml Coconut Milk
A pinch Salt
100g Fresh Raspberries
To Decorate
A handful of Dried Raspberries
A handful of Goji Berries
100g White Chocolate my absolute fave
100g Dark Chocolate I used this
100g Milk Chocolate I used this
DIRECTIONS
Put your coconut, coconut oil, flour, maple syrup, salt and fresh raspberries into a big pot
pour in the coconut milk and then cook on the hob (squishing up the raspberries as you go) until you’re left with a pink porridge-y looking concoction
On a tray covered with a sheet of grease-proof paper pour out your porridge-y mixture. Freeze for 2+ hours or overnight depending on what suits you best.
Once ready, cut up into squares and then set to one side until you’ve safely melted the chocolate of your choice.
Just so you know…these are pretty delicious at this point already, especially in this heat! So you know, if one (or five) were to fall off the tray, I wouldn’t tell, infact I’d be elbowing you out of the way to grab another myself!
I used all three chocolate types, but only melting them one at a time. Coat each square in the chocolate of your choosing, then place into the fridge. While you wait, get some goji berries and dried raspberries and chop them up into really tiny pieces
Once your squares are ready to be taken out of the fridge, it’s time for the fun part, decoration! Dip a teaspoon into a different type of melted chocolate to what the square is coated in and quickly whip the teaspoon back and forth to make crazy patterns, I highly recommend letting your inner two year old out for this bit!
Before the chocolate squiggles have dried, quickly place a few of the dried raspberry/goji berry mix on top and return to the fridge to set.
These gems are quite a sight and are best served straight out of the fridge when the chocolate still has a bit of snap to it because it beautifully contrasts with the deliciously soft raspberry coconut filling on the inside.
I really am so pleased with how these turned out, just look at the yummy yumminess!!
