When it’s too hot for hot food but you want something yummy, this is the one to make, great for the posh side salad, even better as a main!
Homemade pesto with spiralised courgettes, grilled chicken breast, mixed tomatoes and a hunk of burrata cheese, totally delicious and will have the whole house looking for seconds
Homemade Pesto (my recipe here)
A handful of red and yellow tomatoes
1 burrata cheese ball
Grilled breast of chicken
Spiralise your courgettes, I use one like this, then pour your pesto sauce on top and with your hands, mix it thoroughly through the courgette curls, be careful not to break them up too much!
Place your pesto coodles on a serving plate, wash and slice your toms and dot them oh-so-artfully around, add your grilled chicken and then it’s time for that hunk to be torn up and spread over the top
Grab some bowls and chopsticks if you’re feeling fancy and serve up with your choice of chilled bubbles

The crunch of courgette coupled with the luxuriousness of the creamy cheese makes for one truly nom mouthful!
