Yesterday afternoon Himself and I went for a stroll, picked up a gorgeous bunch of flowers from our local seller and when we got back, I decided to make my first ever cheesecake!
I really don’t know what took me so long to make one, they’re so simple and completely delicious.
For the Base
250g Digestive Biscuits
50g Brown Sugar
For the Filling
500g Mascapone Cheese
100g Caster Sugar
Zest of 1 Lemon
Juice of 3 Lemons
Crush the digestive biscuits until fine, then add the brown sugar,
pour the melted butter over the top and mix well. Press into the base of a spring form cake tin and place in the fridge to chill whilst you make the topping.
In a separate bowl, add the cheese, caster sugar, lemon juice, lemon zest and whip until combined.
Spread over the base and chill again, this time for a few hours.
Decorate as you wish, I went with some lemon slices and zest, but the world is your oyster!
I was so chuffed with how it turned out
It’s super creamy with a wonderfully sharp edge – making it an absolute dreamboat of a dessert!
