As the January halfway point approaches, those of you who made resolutions to be healthier for 2016 may feel like you’re hitting a bit of a wall, to help you push through, I’ve got your sweet-tooth covered with this healthy yet unbelievably scrummy, ice cream alternative
Ingredients (makes 4 petite servings, or 2 large)
4 frozen Bananas
2 heaped tbsps Cocoa Powder
1 tbsp Peanut Butter (smooth)
1 tbsp Honey
1 tsp Vanilla Extract
1/4 cup semi-skimmed milk (optional)
1 scoop Protein powder (optional)
Directions
Slice the ripe bananas and place into a freezable container, the bananas will normally freeze within 2-3 hours, but I left these ones in overnight
Once frozen, pop them into the blender along with all the other ingredients and blitz until you’re left with a smooth and creamy gelato!
Line your freezable dish with greaseproof paper and scoop in your newly made soft serve (which is ready to eat if you prefer your ice cream that way!). If like me however, you prefer your ice cream a little sturdier, whack it back into the freezer for another little while before serving
I add a scoop of protein powder to mine because I severely lack protein in my diet when left to my own devices – plus it’s great in aiding muscle recovery which helps me face into another training session without feeling the urge to run away and hide under a blanket!
Now I know what you’re thinking, but have no fear, once it’s been properly mixed in with the other ingredients you can’t taste it at all – hurray!
The great thing about this is that the recipe options are pretty much endless. Vegan? No problem, blitz the banana, add some coconut butter, cocoa powder, bit of unsweetened almond milk and some vanilla extract and you’re good to go!
The smugness that comes with chowing down on such a creamy dessert, yet knowing it’s not bad at all, will hopefully give you the boost you need to keep your resolutions ticking over – at least for another day anyway!
